Our farm produces varieties of beans (phaseolus vulgaris L.), of ancient Lucan origin, in Sarconi promoted by the European Community to indicate the typicality of these precious legumes, grown in this geographical area, with the IGP (Protected Geographical Indication) mark .
Our beans are grown and produced as in the past: in the same "red" land, irrigated with water from the Maglie river, collecting the ripe and leathery pods from the plant, then beaten and shelled by hand and finally, for complete drying, the seeds are exposed to the sun in the farmyard. Beans rich in proteins, fibres, mineral elements and vitamins are a fundamental food for a healthy diet: they are cooked "first water" and are good, tasty and easy to digest.
